Universal Mix Waffles (Gluten-Free)

Crisp on the outside, soft inside — quick gluten-free waffles with yogurt/kefir. Ready in 15 minutes for breakfast or a wholesome snack.
Ingredients
  • 1 egg (55–60 g)
  • 100 g Greek yogurt or kefir (≥ 2.5% fat)
  • 40–50 g Universal Mix
  • A pinch of salt
  • Sugar or honey to taste
  • Optional (sweet): 1 medium banana, cinnamon, vanilla
  • Optional (savory): 1 boiled potato, mashed; herbs and spices
  • For greasing: ghee, coconut oil, or olive oil

Preparation

  1. Mix egg, yogurt/kefir, salt, and sugar/honey.
  2. Add Universal Mix and stir to a smooth, medium-thick batter.
  3. Fold in banana & spices or potato with herbs for a savory version.
  4. Let the batter rest 5–10 minutes to hydrate.
  5. Preheat and generously grease the waffle iron.
  6. Bake until golden brown.
  7. No waffle iron? Cook a thin layer in a greased hot skillet, flip, then roll with filling.
Tip: Greasing well gives better release and crisp ridges.
