Ingredients
Cooked chickpeas — 300 g (soak dry chickpeas overnight before cooking)
Fermentum — 50–70 ml
Fermented salt — ½ tsp, to taste
Sesame press-cake (meal) — 1–2 tbsp
Cold-pressed sesame oil — 1–2 tbsp
Lemon juice — 1–2 tbsp
Garlic — 1–2 cloves (optional)
Spices to taste — cumin, paprika, turmeric, black pepper
Preparation
Cook chickpeas until tender (soak if using dry).
Add chickpeas, sesame meal, garlic, spices, and fermented salt to a blender.
Pour in Fermentum and lemon juice.
Add sesame oil and blend until smooth and creamy.
Adjust texture if needed with a splash of Fermentum or a little more oil.
Optionally leave at room temperature for 12 hours for light fermentation, then refrigerate for up to 7 days.
Serving
Spread on crispbreads, veggie sticks, or crackers.
Use as a salad dressing component or side for warm dishes.
Finish with olive oil, paprika, and herbs.
