Fermented Hummus with Fermentum (Probiotic)

More than a tasty dip — a probiotic spread. Thanks to Fermentum and fresh ingredients, this hummus turns out creamy, rich, and extra friendly to your digestion.
Ingredients
  • Cooked chickpeas — 300 g (soak dry chickpeas overnight before cooking)
  • Fermentum50–70 ml
  • Fermented salt — ½ tsp, to taste
  • Sesame press-cake (meal)1–2 tbsp
  • Cold-pressed sesame oil1–2 tbsp
  • Lemon juice — 1–2 tbsp
  • Garlic — 1–2 cloves (optional)
  • Spices to taste — cumin, paprika, turmeric, black pepper

Preparation

  1. Cook chickpeas until tender (soak if using dry).
  2. Add chickpeas, sesame meal, garlic, spices, and fermented salt to a blender.
  3. Pour in Fermentum and lemon juice.
  4. Add sesame oil and blend until smooth and creamy.
  5. Adjust texture if needed with a splash of Fermentum or a little more oil.
  6. Optionally leave at room temperature for 12 hours for light fermentation, then refrigerate for up to 7 days.

Serving
  • Spread on crispbreads, veggie sticks, or crackers.
  • Use as a salad dressing component or side for warm dishes.
  • Finish with olive oil, paprika, and herbs.
