Crepes with the Universal Press-Cake Mix (Gluten-Free)
Thin, flexible and tender crepes made with milk and the fiber-rich Universal press-cake mix. With beet and spinach options for color and flavor.
Ingredients (for ~500 ml milk)
4 eggs
3 tbsp Universal press-cake mix
2–3 tbsp corn starch or rice flour
Pinch of salt
A little sugar to taste
Optional: dried herbs/spices
For frying: ghee, coconut oil or other vegetable oil
Preparation
Whisk eggs with salt and a little sugar.
Add milk, Universal press-cake mix and corn starch/rice flour. Mix to a smooth, thin crepe batter.
For colored versions, fold in beet or spinach purée (and the suggested aromatic oil/spices).
Let the batter rest for at least 30 minutes to hydrate. Stir well before frying.
Batter should resemble kefir-crepe batter — slightly thicker than classic. If it doesn’t spread, add 1 egg whisked with 1 tbsp water.
Fry in a small skillet over medium heat, well preheating and greasing with ghee/coconut/vegetable oil.
Serve with savory fillings (veggies, fish, herbed cream) or sweet (berries, honey, yogurt).
Flavor & color options Beet crepes:
1 small beet (raw or cooked), blended and folded into the batter
Add cinnamon and nutmeg to taste
Delicious with 1–2 tsp sesame oil
Spinach crepes:
1 small pack of spinach (optionally some arugula), blended and folded into the batter
Optionally 1–2 tsp pumpkin seed oil or hemp oil
Tip: Resting the batter is key to elastic crepes. Use heat-stable aromatic fats — ghee or coconut oil work perfectly. ✨ Light, flexible, tasty — and fiber-friendly!
