Fluffy and aromatic gluten-free pancakes made with the Live Food Universal Mix. Easy to prepare, soft and delicious — a perfect choice for breakfast or a healthy snack.
Ingredients
200 g Universal Mix
250 ml kefir (warmed)
1 egg
2 tbsp water
1 tsp sugar or honey to taste
½ tsp salt
½ tsp baking soda
Optional: cinnamon, vanilla, raisins, finely chopped apple/pear/banana, or berries
For a savory version: basil, herbes de Provence, paprika
Coconut oil or ghee for frying
Preparation
Warm the kefir, stirring gently.
Add salt, sugar (or honey) and baking soda. Mix and let rest for 2–3 minutes.
Whisk the egg with 2 tbsp of water, then pour into the kefir mixture. Stir quickly.
Add the liquid mixture to the dry ingredients and stir until smooth (medium-thick batter).
Optionally, mix in cinnamon, vanilla, dried fruit, or fresh fruit. For savory pancakes, add herbs and spices instead.
Let the batter rest for 20–30 minutes to thicken, then stir again.
Spoon the batter onto a preheated skillet, shaping pancakes 1–1.5 cm thick.
Fry under a lid over medium heat until golden brown on both sides. Serve warm.
