“Izumitelny” Bar with Universal Mix (Gluten-Free)

Dense, aromatic and nourishing nut-vanilla snack bars. Mix everything, rest 15 minutes, portion to 75 g — then bake. A wholesome grab-and-go snack.
Ingredients
  • 1 kg Universal Mix
  • 800 g very warm water
  • 50 g ghee or coconut oil (melted)
  • 1 packet baking powder (10–12 g)
  • Vanilla to taste
  • 100–150 g ground nuts (walnuts/almonds/hazelnuts)
  • Optional: 50–100 g raisins or other dried fruit
  • Pinch of salt (optional)

Preparation

  1. Combine dry ingredients: mix, baking powder, vanilla, salt.
  2. Fully melt ghee/coconut oil in very warm water.
  3. Add ground nuts (and dried fruit if using) to the dry bowl.
  4. Pour in the warm water with oil; stir thoroughly until uniform.
  5. Cover and let rest 15 minutes to hydrate.
  6. Portion the dough into ~75 g bars and shape.
  7. Bake at ~180 °C / 355 °F for 20–25 minutes until a skewer comes out dry and tops are lightly golden.
  8. Cool on a rack for best texture.

Tips:
  • Adjust with 1 tbsp warm water if dry; add a little mix if too soft.
  • Great add-ins: cacao nibs, apricots, cranberries, cinnamon/cardamom.
  • Storage: 3–4 days room temp; up to 7 days refrigerated.
